Michael, chef: Apprenticeships have a threefold benefit to the business. One, they keep you humble. Two, they keep you questioning. And three, they add an energy to the business that will refresh everybody around them. I filled out the survey because I love my industry. I have a great passion for what I do, and I would love to be able to pass on the skills that other chefs have given me and the time and energy they’ve given to me. I’d love to move forwards; the more we are involved and as a chef community, the better the apprenticeship program will be. It’s that simple.
